THE FRESHEST FISH

We think a fish that’s traveled thousands of miles across oceans, over rocks, and up rivers deserves the quickest possible trip from its home in pristine waters to your plate. That short, traceable path is a lot different from the route most eels take to a meal.

Those long, dark journeys often include exposure to multiple toxins, ingestion of hormones and antibiotics, and submission to a host of cruel and unethical practices. The result is a failing global eel market of endangered species that are often dangerous to eat.

THE PERFECT PLACE

We created a place and practice that maintains the purity of the natural world we call home. We purchase our elvers from licensed eel harvesters, ensuring that they’re safe and responsibly sourced. Then we raise them in our state-of-the-art aquafarm powered by clean energy and water, where they’re fed nourishing feed in size-graded tanks that promote free and healthy growth. The result is an indescribably delicious fish with the natural purity and freshness.

THE FISH FIT FOR THE FUTURE OF HEALTH

It’s no wonder that an animal that’s survived for 70 million years has the power to support your good health too. Eels are rich in vitamins A, D, and B12, high in protein, and an excellent source of omega-3. But those benefits to your body are just the start of how this fish can contribute to the wellbeing of our entire world. Add in eels’ small feed needs and American Unagi’s disruption of the huge carbon footprint required by conventionally sold eels, and you’ve got a fish positioned to feed a hungry planet’s needs.

A FOUNDER PARTNERING FOR PLANETARY SUCCESS

It took someone with a global perspective on seafood to create the new standard for world-class unagi. Sara Rademaker’s distinguished career has taken her everywhere, from shepherding aquaponic micro-businesses in the US to managing large-scale aquaculture facilities in Africa. Her passion for the native fish species that became the focus of her work finally landed her in Maine. Here, she’s partnered with the state’s fishing, culinary, and business communities to establish the country’s largest commercial eel farm as the kind of future-focused business critical to sustaining ourselves and our world.
